Shortcake The Nor-Way...

There's a yummy shortcake recipe mom used to bake, it's from Norway and I always believed it was our Norwegian recipe, but its just an old friend's from the Colorado days. Makes sense now, any teeny bit of my Norwegian blood was invaded by the Gaelic clans and ta da! I'm English/Irish mostly. Some days I swear...I feel the friction...my English never can get along with the Irish...tisk, tisk.
So! here it is tried and true and passed down through...the blood lines...fine and genuine folks! Best served with strawberries and homemade whipped cream...summer in a bite! Yum, yum! Oh! love it, love it, love it!

Preheat Oven to 350

1 cup flour

1 cup sugar ( i really like brown sugar, so I do half n half)

1 tspn vanilla ( a real treat if you can get your hands on the real stuff from Mexico...i just had the regular imitation)

1 tspn baking powder

Break 3 eggs in 1 cup and add cream to fill.
Put all together, beat until smooth
Pour and bake in square pan 350, approx 40 minutes.


Whilst you wait: Strawberries and Cream:
Wash and slice fresh strawberries, sprinkle with sugar and let rest in bowl. Time and sugar will make it "melt" and its makes it own bit of sauce.

And...
2 pints heavy whipping cream and a handful of powdered sugar. Beat this until soft peaks form...fluffy homemade whipped cream! I like it less sweet, but add more/less powdered sugar to your own liking...
Mint leaves look so pretty on the plate, and it cleans your palette with just a hint pure cool mintyness!
Add the decadent ALL to the shortcake and viola! golden sunshine and summer strawberries in your mouth!
